Almond Pear Tart

Delicious, only sightly sweet, almond pastry with pears and apricot glaze. The fresh, firm, pears are in season right now at our local farmer’s cooperative. Almond meal was the perfect accompaniment. The nutty flavor is a favorite from almond croissants and I enjoyed finding a new way to incorporate it into a recipe.

Ingredients

A blind-baked sweet pastry shell
1-2 Firm Pears
2.5 cups almond meal
3 eggs
1/2 cup confectioners sugar
1 teaspoon vanilla extract
1/4 cup apricot jam
1/4 cup water

Equipment

Mixing bowl
Metal spoon
Paring knife
Pastry brush
Small preparation bowl
Measuring cups and spoons
Preheat oven to 400F

Making

Start with a sweet pastry shell and blind bake it (see recipe)
In large mixing bowl, place almond meal, sugar and vanilla.
Add 3 eggs and stir to combine ingredients.
Pour into cooled pastry shell and level out.
Peel and core pears. Slice thinly and arrange in a fan
(hint: it will fan more easily if you place base of pear against outside of pastry)
In small preparation bowl, mix water and apricot jam together to form thin glaze.
Brush apricot glaze over the pears to thoroughly cover the top of the pie.
Bake in oven for 25-30 minutes until pears are soft and almond base is set.

Serve warm or cool with whipped cream and ice cream or enjoy as a simple slice.

Tipsy Tarts

Tipsy tarts are a treat for the holidays. Laced with rum and brandy and sweetened with honey, the fruit steeps for a week in the refrigerator.

I tend to avoid cherries and nuts in my holiday fruit mix and instead use a more European combination of raisins, apricots and dates. I start with soaking chopped dates in boiling water with molasses overnight and then add the other fruit until the bowl is half full. Add half a cup each of a decent brandy and a dark rum. This time I included dark agave syrup, and a jar of local honey. Covered with plastic and put it in the fridge, stirring every day for a week. The fruit soaked up the grog and became sticky and delicious.

Spooned the resulting mix into tiny pie tarts (you can make your own or buy them pre-made – there are even gluten free varieties available).

I added a cup of the mix to a date cake and made delicious holiday cake as well.

I love the idea that we live in a time when we can get any produce at any time, at least hypothetically. Yet recently, I’ve come to notice that foods that are forced to grow out of season just don’t taste as good. The out-of-season foods may be uniform in size and shape, and they are made to pack and travel well; that makes them reliable in a sense. Yet what is missing, for me, is the concentrated flavor and organic variation that makes the food visually and aesthetically pleasing. As an artist, I cannot imagine wanting to draw a perfect apple or raspberry; that would make for an artificial-looking image composition at best, more like wax than something edible. Apparently my taste buds feel the same way!

Lately, I’ve been making fresh fruit snacks from whatever fruit is in season, usually from local growers. Organic is a preference, where available, though a good wash removes most of the chemicals. I choose fruit that is just at, or nearly past, its peak, firm but starting to get a little soft. Ready to eat today or tomorrow is my general rule, and it has to be “smelly”, that is to say ripe. If there is no scent to the food, then I walk away. From May onwards, local farmers markets are opening in school parking lots and community centers, and that’s my favorite place to shop for fresh produce. It’s always good to learn something new from the grower, and the sensory experience of seeing the food and being amongst community members makes me feel connected. Being in the moment, and noticing what my body wants to eat is also part of the experience.

Balances of sweet and savory appeal to me most, things like pears with curry cashews and chopped dates, pistachios sprinkled over nectarines, accompanied by a sharp cheese (Beecher’s Flagship), some pickled onions, snappy crackers (Ritz baked). Here are some snacks I’ve enjoyed from March through May in Seattle.
